Development of our Balsamic Vinegar Plant
The Emilio Carandini Plant is considered to be one of the most modern and well-equipped producers of Balsamic Vinegar of Modena, thanks to its cutting-edge systems and top-level productive capabilities.
Our in-house laboratory is designed to carry out direct controls in real-time on all phases of production, starting from original ingredient reception all the way to bottling, including the stages of vinegar maturation and ageing, thereby guaranteeing the consumer both quality and safety.
Over the years the company has been able to knowledgeably combine technical innovations with methods linked to tradition, such as maturation and slow ageing of the vinegar in differerently veneered casks. This enhances the product with characteristics of both colour and flavour which set it apart from the rest.
